Lentil dhal with spinach and sweet potato

Red lentil dhal with extra veggies. Fresh, indian flavours. Great for a main dish or as a side.

Dhal ingredients

serves 4
  • 250g red lentils
  • 1medium (400g) sweet potato
  • 1medium (150g) red onion
  • 1clove garlic
  • 30g (thumb sized) ginger, diced
  • 1pc chili pepper, sliced
  • 80g spinach
  • 4db spring onions, diagonally sliced
  • 20g fresh basil, leaves torn
  • 600ml vegetable stock
  • 1tbsp sezame oil
  • 1.5tsp turmeric
  • 1.5tsp cumin
  • salt


Step 1

On a low heat, in a larger pot with a lid, add the oil and the onion to fry for around 10 mins.

Step 2

Once the onions become translucent, add the turmeric, cumin, garlic and ginger. Cook for 1 min more.

Step 3

Turn up the heat to medium, and add the sweet potato, and mix it well.

Step 4

Add the lentils and the vegetable stock.

Step 5

Bring it to boil, then reduce the heat, cover and cook for around 20 more minutes until the lentils and the sweet potato becomes soft.

Step 6

Season to taste with salt.

Step 7

Add the spinach, and as soon as it wilted, take off the dhal from the heat.

Step 8

Top it with spring onions and fresh basil to serve.
