- 800g fresh salmon with skin
- 100g butter
- 2pcs (500g) zucchini, diced
- 1pc (250g) eggplant, diced
- 1pc (300g) bell pepper, diced
- 1pc lemon, squeezed
- salt, black pepper
To make a great meal, sometimes it's not about the complexity of the recipe but rather the ingredients. The secret is, always use fresh and high quality ingredients.
Preheat the oven to 200 degrees.
Put half of the butter in a pan, and fry both sides of the salmon until the meat becomes white (around 2-3 mins). In the meantime add salt and pepper to taste.
Put the salmon in the preheated oven for another 10mins.
In the pan in which the salmon was fried, add the remaining of the butter and the diced vegetables. Add salt and pepper to taste.
Fry the vegetables for around 20mins (to taste).
Serve the salmon with some lemon juice on top.
