Chili con carne

Meaning chili with meat, a classical Mexican spicy stew.

Chili ingredients

serves 4
  • 1 medium bell pepper, red
  • 500g pork meat (minced)
  • 400g fresh tomato (diced)
  • 2tbsp tomato pureĆ©
  • 2 cans (820g) red kidney beans
  • 0.5 can (200g) corn, sweet
  • 1 large onion
  • 2 cloves garlic
  • 1tbsp oil, sunflower
  • 1tsp chili
  • 1tsp red pepper, sweet
  • 2tsp cumin
  • 1 cube beef stock
  • 1tsp marjoram
  • 300ml water
  • salt, pepper, corriander

Instructions

On a medium heat add the oil and onions, and fry them for 5 mins.

Put in the chopped garlic, and the spices (chili, red pepper, cumin and marjoram). Fry it at most 1 more minute, until the aromas are out

Insert the bell pepper and the meat, fry them for 5-10 mins

Add the chopped tomato, and the tomato pureƩ. Season it with salt and pepper

After few minutes of cooking, add the water and the beef stock.

Wait until it starts boiling again, and let it cook for 20 more minutes under cover

After draining the beans, add to the pot, and cook 10 more minutes

In the end we put in the corn as well and cook everything few more minutes.

Turn off the heat and let it sit before serving for 10mins, to enable the tastes to merge

Serve with Jasmin rice, and fresh corriander
