Jokai bean soup

Rich, traditional Hungarian bean soup, with smoked pork knuckle, and sausages.

Soup ingredients

  • 400g smoked spare ribs (whole)
  • 250 g smoked sausage (thickly sliced)
  • 300g beans
  • 4 pc (350g) carrots (thickly sliced)
  • 1 pc (100g) kohlrabi (diced)
  • 0.25 pc (100g) celery (diced)
  • 1 db (50g) parsley root (thickly sliced)
  • 3 pc bay leaf
  • salt
  • 1 tbsp vinegar
  • 250g sour cream 12%
  • 2 tbsp (40g) flour
  • 1 tsp grounded red pepper
  • 3 cloves garlic


Step 1

Fill the pot with water (leaving enough space for all the ingredients) and put in the meat to cook on medium heat.

Step 2

Once the meat is tender, put in the beans, bay leaves, carrots, celery, khorlabe, parsley root and the sausages.

Step 3

Cook untile the beans are tender. During cooking, taste it frequently and add salt if necessary.

Step 4

Take out the meat.

Step 5

Make the roux using the sour cream, flour, grounded red pepper and garlic, and add it to the soup.

Step 6

Boil it again, and let it cook for 10-12 minutes.
