Mushroom Risotto with Quinoa

Risotto with a twist.

Risotto ingredients

  • 300g quinoa
  • 2 cloves garlic
  • 3 medium Shallots
  • 400g Mushrooms
  • 2 tbsp olive oil
  • 400ml water
  • 125ml vegetable broth
  • 1 green onion
  • salt, pepper


Step 1

Place the quinoa in a strainer and briefly rinse under warm water to help rid the quinoa of any bitterness.

Step 2

Peel and cut the garlic cloves and shallots into small cubes.

Step 3

Clean the mushrooms and cut into slices.

Step 4

Heat the oil in a pan and sauté the garlic, shallots and mushrooms for several minutes.

Step 5

Add the quinoa to the pan, brown briefly and deglaze with the water and vegetable broth.

Step 6

Let the risotto cook for approx. 15 minutes until all water has evaporated.

Step 7

While the risotto cooks, cut the green onion into rings.

Step 8

Season with salt and pepper and serve with the green onion rings.
