Serbian baked beans (prebranac)

Prebranac, a casserole of caramelized onions and white beans, is one of the staple dishes of Serbian cuisine. It is one of the classic comfort foods of Balkans.

Beans ingredients

serves 4
  • 600g large white beans
  • 120ml sunflower oil
  • 600g onion, thinly sliced
  • 3cloves (10g) garlic, diced
  • 1tsp (10g) ground red pepper
  • 2pcs bay leaf
  • 2tbsp salt
  • pepper


Step 1

Leave the beans to soak in cold water during a night.

Step 2

Pour out the water, and wash out well the beans in cold water.

Step 3

In around 2.5l cold water put the beans to boil. Add the bay leaves and salt to taste.

Step 4

After it boiled up, turn down the heat to medium and cook it for 2-3 hours. The beans are ready when they are soft, but not yet disintegrating.

Step 5

Strain the water from the beans, and keep it in a separate dish.

Step 6

In the meantime fry the thinly sliced onions in the oil for 10-15mins.

Step 7

After 15-20 min frying add the garlic, and fry for 1 more minute. Then take it off the heat.

Step 8

Add the ground red pepper, and the strained beans, and mix them well.

Step 9

Preheat the oven to 200 degrees.

Step 10

Pour the beans with onions to a baking tray (ideally a clay one). Bake for 15-20 mins.

Step 11

Can be served both cold and hot.
